Samgyetang (삼계탕)- Ginseng Chicken Stew

SamGyeTang is a healthy stew of whole chicken, ginseng, herbs and glutenous rice. It is traditionally served during ‘Sambok’, the three hottest days in Korea to help boost stamina when the heat drains the body of energy. Of course, it’s not just for hot summer days, but hearty and delicious year-round. Who wouldn’t love a hot bowl of chicken stew on a cold winter day?

Ingredients

  • 1 whole chicken
  • 1 cup of glutinous rice
  • jujubes or Asian dates
  • ginseng
  • Asian chestnuts
  • whole garlic
  • 1 whole onion
  • green onion
  • whole pepper
  • salt

The chicken and veggies you can find at most places. For the glutinous rice, ginseng and other ingredients, you’ll want to find an Asian grocery store or market. We luckily have H-Mart locally, which carries many Korean and other Asian groceries and produce.

At these Asian grocery stores, you can find herb packs made especially for Samgyetang, which will include enough ginseng, dates and other herbs for a pot of stew.

Directions

  1. Rinse, then soak the rice for at least an hour (overnight if possible)
  2. Clean the chicken, inside and out.
  3. Stuff the chicken cavity with rice, then place in pot. To keep the rice inside, one method is to cut one thigh and insert the other leg through the cut.
  4. Add other ingredients and water.
  5. With a pressure cooker, cook 10~15 minutes. For stovetop, bring to a boil, then cook on low heat for 1~3 hours.
  6. Serve.
